Read, choose and book the programme as follows and you will enjoy a private cooking class based on fresh pasta and a particular one-to-one lesson during which you will discover everything about Mortadella and other Emilan cold cuts, such as Parma ham and salami. How to recognize them, how to cut them… but above all how to taste them!
You will meet your local, private guide / assistant in Bologna. After a short introductory walk to the historic food and wine core of the city and the market and guild area, you will be the protagonists of a private cooking lesson, during which an expert “sfoglina” will teach you the art of handmade fresh pasta.
Tortellini, lasagne and Italian tagliatelle will no longer have any secrets for you!
Finally you will taste a pasta dish paired with a glass of wine. Then, step by step, on to a cold meats and salami historic factory for a stop dedicated to the traditional Bolognese products you will taste such as “Mortadella, salame rosa, ciccioli campagnoli, prosciutto di Parma, pancetta coppata, pancetta arrotolata, coppa di testa,salame and prosciutto cotto affumicati,salame gentile,strolghino and passita nostrana”. During the explanation received, you will follow some cutting techniques and the preparation of some “taglieri” (cold cuts platters).
The second part of the program will be dedicated to the different kinds of Emilian and Italian cheese, with some details about cheesemaking styles, milk processing, how to prepare a cold cuts platter and how to taste it paired with different kinds of “mostarda” (Italian sweet fruit pickles) and wine .
